Description

Borage is an heirloom plant with fuzzy, dark green leaves and brilliant, blue star-shaped flowers in summer. Although an annual, it easily reseeds itself, providing you with plants in successive years. It is native to the Middle East and has an ancient history in war as an enhancement for bravery and courage, and has long been used as an herbal remedy. The leaves, flowers and stalks are all edible and taste a little like cucumber. Use young leaves and flowers for salads and to flavor lemonade and tea. Flowers can be candied. It's attractive to bees and is known to make an excellent flavored honey. It's also a good companion plant for tomatoes, squash and strawberries. It's an excellent green manure, too, and will return high nitrogen to the soil when it's tilled back in. 2'+ tall. Very easy to grow, tolerant of any soil type.
